Wagyu Center Cut Sirloin

The sirloin is towards the bottom, or end of the cow’s back, just in front of the part of the cow that is referred to as the rump. The sirloin sits above the tenderloin (which is where the filet comes from). Because cows don’t use this area much, these cuts are tender and are rich with flavor.
